Burdock - Biennial - Culinary, Medicinal - A tall central stalk surrounded by huge elephant ear-type topped with round heads of purple flowers that mature into 1in. burrs. The stalks can be harvested while still young, boiled and eaten like asparagus, eaten raw in salads or candied, like angelica. Medicinally, roots harvested from the first year's growth are dried and used as a blood purifier. The leaves are used in polticies to relieve bruises and swellings and tumors. Seeds are used for skin softening. Can be invasive without control. Full sun: plant height 4-8ft.
