Onions can be started from seed or plants in fertile, well drained soil, the best being a humus rich sandy loam. There are three basic types of onions: Long Day, Short Day and Intermediate. Onions begin with growth concentrated on roots and leaves, then begin to form bulbs when daylight hours reach a particular length. It is very important to plant a variety that is meant for your climate. If you try a long day type in the deep south in the US, it will form tops, but very small bulbs and will be exposed to too much heat, killing the tops before the bulb can form. A short day type planted in the north will try to produce bulbs before the leaves have properly formed, limiting the size of the bulb because it hasn't enough food to supply it. Long Day varieties do best in northern areas that have more hours of daylight in the summer (14-16 hours). Long day onions are excellent keeping varieties. Intermediate onions are the most widely adapted, being best for the middle latitudes (12-14 hours of sunlight per day). They can be used in northern regions and in the south where daylight hours reach 10-12 hours per day. Short Day types are best suited for southern climates, when day length reaches 12-14 hours of sunlight, and are generally planted in the winter or early spring. These types usually do not store well.
The size of the onion can be foretold by the number of leaves on the plant at maturity - the rule is: 1 leaf per ring on the bulb.
